I woke up this morning to the orange leaves outside and a craving for a fall treat. I did not, however, want to venture outside and run down to Starbucks for a sugar-filled, syrupy cup o’ joe. Somewhere between temptation and disappointment it hit me, I could just recreate a healthier version at home. No money spent and I can stay in my robe… double win!
Thankfully my mother-in-law is an avid baker and has been perfecting her already fabulous pumpkin pie in preparation for Thanksgiving. Everything I needed was right there, staring me in the face, screaming USE ME.
I took some of the leftover coffee from the morning (don’t worry, it still tasted great), and poured it into the Nutribullet. There was about 8 ounces left. I then topped it with some almond milk, sprinkled a healthy dose of cinnamon, ginger powder and allspice into the mini blender, added some vegan collagen powder and protein powder. As well packing in a load of amino acids, collagen powder is great for adding froth and thickness. The protein makes sure I prevent the early morning hangries while I get ready.
I popped on the lid and blended away until everything was thoroughly mixed. You can also put everything in a pot and heat it on the stove if you want a hotter, less frothy option. I kept it simple and quick (remember the hangries).
And voilà! An easy peasy, somewhat lazy version of the ever-awaited pumpkin spiced latte. Plus, it’s low sugar, high protein and made from ingredients many people have sitting in their cupboards.
Ingredients:
1 cup brewed coffee
1/2 cup almond milk (I love Califia)
1-2 tsp cinnamon
1-2 tsp allspice
1-2 tsp ginger powder
1 scoop collagen powder
1 scoop protein
